Champagne Brunch

The culmination of this five day wine event is the Champagne Brunch held in the award winning restaurant of the Sawgrass Golf Resort & Spa, A Marriott Resort, The Augustine Grille. The Grille has been recognized not only as one of the top 25 restaurants in Northeast Florida, but also was chosen to represent the Jacksonville Jaguars at the Taste of the NFL, Super Bowl 2007. Much of that accolade is due to the talents of their chef, Brett A. Smith, who will prepare our four course brunch to accompany an assortment of champagnes from France and sparkling wine from California.

Moët & Chandon is one of the oldest and most celebrated of the French champagne houses and also co-owner of the luxury goods company, Louis Vuitton. The company holds a Royal Warrant to supply champagne to Queen Elizabeth II. Moët et Chandon was established in 1743 by Claude Moët, and today owns more than 1,500 acres of vineyards and annually produces more than 2,000,000 cases of champagne.

Fast forward 200-plus years. Count Robert Jean de Vogué, chairman of the board of the parent company of Moët-Hennessy, set his sights on California expansion, and in 1973, Moët-Hennessy bought land in Northern California, planted vineyards and designed Domaine Chandon, an architectural and ecological winery that blends into its surroundings and reflects Chandon's legacy of excellence. Their first sparkling wine was released in 1976. In 1977, their visitor center opened its doors, marking the first French-owned sparkling wine venture in the United States.

We return again to the Champagne of France with the house of Veuve Clicquot transformed in the early 1800's by the widow of the son's founder, Madame Barbe-Nicole Clicquot, who transformed the Champagne industry (and unknowingly aided crystal manufacturers) when she invented the crucial riddling process, which removes the dead yeast from the Champagne bottle after the secondary fermentation. Consequently, Champagne became a bright sparkling wine, which consumers could drink in clear crystal glasses, instead of a murky liquid, hidden behind colored stemware and this Champagne is still among the world's finest.
